Ryan Young's list of VW powered aircraft has a link to the Tipsy Nipper, which is a Belgian airplane with pretty cool swoopy lines. It's different and I really quite like it.

I haven't seen anything about it's flying qualities, or how hard it would be to build (it was designed to be both plans and factory built), So I don't know if it can be recommended, but the plans are (maybe?) currently available.
